Oatmeal cookies

Today I bake oatmeal cookies. Original recipe was adapted from here



However i made some changes due to ingredients inavailability :p



I cup of all purpose flour

1/2 tsp baking soda

1/2 tsp salt

1tsp ground cinnamon



3 cups oatmeal (I used Quakers quick cooking oat)



200g butter

1 cup castor sugar

1 large egg



1 cup of groundnut & walnut, coarsely chopped



Method:

1. Beat butter, sugar and egg

2. Add in the mixture of dry ingredients (flour, baking soda, salt, ground cinnamon)

3. Add in oat

4. Add in the nuts

5. The product is a crumbly mixture, turn them into balls (to your desired cookie size)

6. Put them on the baking tray, pressed to your desired thickness

7. Bake at 180 degree celcius, about 10-15 minutes until the edge become brown but the centre is still soft

8. Cool them on a wire rack.



Makes about 36 crunchy-edge-with-soft-melt-in the-mouth-centre oatmeal cookies!
